Qdoba was started in Denver in 1995 as Zuma Fresh Mexican Grill by Anthony Miller and Robert Hauser, then became Z-Teca in 1997 and Qdoba Mexican Grill in 1999. Jack in the Box purchased it in 2003, and Qdoba relocated its headquarters from Lakewood to its parent company’s operations in San Diego in early 2017.
