Cinco de Mayo originated in Mexico’s Second French Intervention after the Mexico-U.S. war of 1846–48 and the Reform War of 1858–61. The emblematic dish of Puebla is Mole Poblano. Serve healthy meals such as cool bell pepper strips and low fat sour cream without adding salt to the beans, as well as brown rice of Spanish type.
