You’ll discover many of classic Mexican cuisine at Mexico City’s Azul Historica. Molletes is a meal served with salsa mexicana, with crisp bread, refreshed beans and cheese. Enchiladas come with sauce from the black mole and memelitas include cakes made of maize and chicken, bean layers and other toppings like cheese and even edible flowers.Chef Ricardo Muñoz Zurita has numerous restaurants in the capital of Mexico, greatest of which is Azul Histórico, a hotel and retail resort in Mexico’s downtown area, near the historic centre of the city. The location is charming: rough, wooden tables sitting on a stone courtyard, surrounded by trees with lights. The structure is built in the 17th century. Nearby, women create tortillas by hand in the view of customers and waiters, bringing sackcloths of the hot tortillas to their tables, accompanying meals such as the cochinite pibil (the pit-roast pig cooked in the traditional Yucatán Peninsula manner).A number of Mexican delicacies, such as tacos, cakes and burritos is offered by Estrella Azul. While Herrera’s own preferences are tacos or steaks or chicken nachos, he still serves a favourite customer car: chilaquiles, a Mexican traditional meal made up from sliced maize tortillas.
